Its history

For many years in the world of brewing, fermentation in wooden barrels was the rule, until this practice died out with the Industrial Revolution. Sidelined since then, the wooden barrel is now making a triumphant return. Used successively for wines and spirits, the barrel accumulates aromatic characteristics. This “memory” of the barrel influences the beer and allows it to develop new aromas with increased complexity. Over the last few months, the Brasserie des Légendes has revived this ancestral technique by setting up a barrel store in Ellezelles, where patience and silence are the watchwords.
